Why Coal
Coal Fired Hearthstone Ovens are the only ovens that can deliver a truly authentic New York Style Pizza. When Italian immigrants first came to New York City in the late 19th Century they used coal as a heating source because of its availability and low cost. Coal burns twice as hot as wood and provides an even burn, producing charred crust and perfectly caramelized toppings.
Anthracite coal burns cleaner than wood and it is a more environmentally friendly option. Our coal ovens are ignited hours before the first “pie” hits the deck and must be tended throughout the day to ensure perfection. Fresh ingredients, traditional pizza sauce and a coal oven burning at nearly 1000° Fahrenheit are what make Vito’s the most authentic and original coal fired pizza.
